Easy Summer Salad

Beetroot

Smoked salmon, prawns and avocado salsa.
Prepare the salmon part of this recipe the night before you are going to serve it. Prepare the avocado salsa just before serving. Ingredients
200g smoked salmon – chopped quite small
A tub of low fat crème fraîche
Rind of 1 lemon

1 Avocado, de-stoned and peeled
Ground black pepper
Juice of 1 lemon
1 Radish finely chopped
1 Cucumber De-seeded, peeled and finely chopped
Method
It is preferable to prepare the salmon the night before.
Mix the salmon, pepper, lemon rind and crème fraîche in a bowl.
Cover with cling film.
Refrigerate overnight.
For the salsa.
Prepare before serving.
Have the radish, cucumber chopped & in a bowl.
Add the pepper & lemon juice.
Add the avocado & mash to a preferred consistency.
