Asparagus Omelette

Asparagus Omelette makes a great weekend brunch for the late risers! It can also be a nice late dinner!

Ingredients
  • 2 tsp tbsp rapeseed oil
  • 1 fresh asparagus
  • Freshly ground pepper to taste.
  • Pinch salt
  • 1 tsp fat free milk
  • 2 eggs
  • Add some chopped chives & 1 or 2 cloves minced garlic cloves to taste.
Instructions
  1. Heat a small pan & add the oil.
  2. Beat the eggs with a fork until frothy.
  3. Season & add the milk.
  4. When the pan feels hot, pour in the egg mixture, tilting the pan until the eggs evenly cover it.
  5. Using a spatula, lift up the edges of the omelette while tilting the pan with your other hand. This will allow the egg mixture run underneath, in the first minute or two of cooking.
  6. Spread the asparagus chunks down the middle of the omelette.
  7. Using the spatula, fold from the edges in towards the middle, so that the omelette folds over on itself.
