Ingredients

cups Couscous

bunch scallions, trimmed & chopped finely.

small green pepper, cored, de-seeded & chopped.

inch piece cucumber, chopped.]1 can chickpeas, rinsed & drained.

Pomegranate seeds.

Salt & pepper.
Instructions

Dressing:
Finely grated rind of 1 orange.
1 tbsp chopped fresh mint
1 tub fat free natural yoghurt.
Put the couscous in a bowl & cover with boiling water. Leave it to soak for about 15 mins to swell the grains, then stir with a fork to separate them.
Add the scallions, pepper, cucumber, chickpeas to the couscous, stirring to combine. Season well with salt & pepper.
To make the dressing, mix the orange rind, mint & yoghurt. Pour over the couscous mixture & stir well.
Scatter the pomegranate seeds to serve.
