Homemade Egg Fried Rice

Homemade Egg Fried Rice is a really quick dish to make with leftover rice from the previous day! The dish is best made with cold rice, which is as dry as possible. Tip - Use some kitchen paper to soak up any dampness.

Ingredients
  • 500 g Precooked Cold Rice
  • 1 Onion, diced
  • 2 Cloves of Garlic, crushed
  • 125 g Frozen Garden Peas
  • 125 g Mushrooms, diced
  • 1 Red Pepper, diced
  • 1 tbsp Rapeseed Oil
  • 1 tsp Chinese Five Spice powder
  • 2 Eggs, beaten
  • 1 tbsp Soy Sauce
  • 2 tbsp Freshly chopped flat leaf parsley
  • 1/2 tsp Ground Black Pepper
  • 1/2 tsp Sea Salt
Instructions
  1. Heat the oil in a large wok. Place the onions, garlic, red pepper, peas & mushrooms & stir-fry. You have an option of adding King Prawns here if you wish.
  2. Cook for 3-4 minutes.
  3. Add the 5 spice powder, rice, soy sauce and stir-fry for about 5 minutes.
  4. Make a well in the rice and add the beaten eggs. Stir vigorously until all the rice is coated. If you prefer chunkier pieces of egg in it, allow the egg to set a little longer before stirring!
  5. Season and serve with the chopped parsley sprinkled on top.
