Mixed Bean & Lentil Soup
Mixed Bean & Lentil Soup is a meal on its own!
Ingredients

Rapeseed Oil

red onion, halved & sliced

potatoes, peeled & diced

1
carrot sliced

1
leek sliced
-
1
green chilli sliced

3
garlic cloves crushed

1
tsp
ground coriander
-
1
tsp
chilli powder
-
1
litre vegetable stock
-
1
can of mixed beans - drained
-
Salt & Pepper to season & coriander to garnish.
Instructions

Heat the oil in a large saucepan & add the onion, potato, carrot & leek. Sate for a couple of minutes, stirring until the veggies are soft.

Add the chilli & garlic & cook for another minute.

Stir in the ground coriander, chilli powder & vegetable stock.

Bring the soup to the boil, reduce the heat & cook for another 20 minutes until the vegetables are tender.

Stir in the beans, season well with salt & pepper & cook for another 10 minutes, stirring occasionally.
