Mixed Bean & Lentil Soup

Mixed Bean & Lentil Soup is a meal on its own!

Ingredients
  • 1 tsp Rapeseed Oil
  • 1 red onion, halved & sliced
  • 2 potatoes, peeled & diced
  • 1 carrot sliced
  • 1 leek sliced
  • 1 green chilli sliced
  • 3 garlic cloves crushed
  • 1 tsp ground coriander
  • 1 tsp chilli powder
  • 1 litre vegetable stock
  • 1 can of mixed beans - drained
  • Salt & Pepper to season & coriander to garnish.
Instructions
  1. Heat the oil in a large saucepan & add the onion, potato, carrot & leek. Sate for a couple of minutes, stirring until the veggies are soft.
  2. Add the chilli & garlic & cook for another minute.
  3. Stir in the ground coriander, chilli powder & vegetable stock.
  4. Bring the soup to the boil, reduce the heat & cook for another 20 minutes until the vegetables are tender.
  5. Stir in the beans, season well with salt & pepper & cook for another 10 minutes, stirring occasionally.
