  • This pancake batter is prepared the night before.
  • Mix the couscous with the yoghurt. Add 3 beaten eggs. Stir and cover - refridgerate overnight
  • Remove from the fridge.
  • Heat a non stick pan. If none available, add the oil
  • Spoon small portions of batter on to the pan. Do not be tempted to make a larger pancake, as the pancake will break up if it is too big,
  • Turn after 2 minutes or when browned on the underside.
  • Serve with a portion of fruit & a dollop of yoghurt. Sprinkle the optional icing sugar.
