Valentines Salmon Starter Recipe

Valentines Salmon Starter Recipe using smoked salmon, served with Avocado Salsa and Prawns.

Ingredients
  • 8 King Prawns - 2 per person
  • 200 g Smoked Salmon, finely chopped
  • 1 cup Low Fat Crème Fraîche
  • Rind of 1 lemon
  • tsp Freshly ground black pepper
  • Avocado Salsa
  • 1 Fresh and Ripe Avocado
  • 1 tsp Ground black pepper
  • 1 Juice of 1 lemon
  • 1 1 radish finely chopped
  • 1 1 Cucumber Deseeded, peeled and finely chopped
Instructions
  1. Mix the salmon, pepper, lemon rind and crème fraîche in a bowl, cover with cling film.
  2. Refrigerate for a couple of hours if possible and ideally overnight.
  3. Avocado Salsa
  4. Place the chopped radish and cucumber in a bowl.
  5. Add the pepper and lemon juice
  6. Peel the Avocado and remove the stone.
  7. Add the Avocado to the bowl and mash to preferred consistency. Some people like it really sommoth, others like a bite of bite to it.
  8. If the prawns are raw - simply stir fry and chill.
  9. These are nicely served in a glass. Start with the smoked salmon, add the avocado salsa and top with the prawns.
