Herb and Lime Baked Sea Bass

Herb and Lime Baked Fish with roasted vegetables. Or, choose any white fish such as Cod or Hake.

Ingredients
  • 2 Sea Bass Fillets
  • 1 l Freshly Squeezed Lime Juice
  • 2 tsp Rapeseed Oil
  • 1 Onion, sliced
  • 1 Sweet Chilli Pepper
  • 1 Each Red, Yellow, Green Bell Peppers
  • 1 Garlic Clove, minced
  • 1/2 tbsp Fresh Coriander
  • 1/2 tbsp Chopped Fresh Mixed Herbs
  • 1 Fresh Lime
Instructions
  1. Preheat the oven to 180° Place the fish in a bowl & pour the lime juice over it. Turn the fish in the juice. Season with Salt & Pepper. Cover and leave in a cool place for 15-30 minutes
  2. Halve the peppers and remove the seeds.
  3. Add the oil to the baking tray. This saves having to wash extra pans! On the hob, add the garlic, onion and peppers to the baking tray and gently for a few minutes until the onion has softened.
  4. Place the fish over the vegetables.
  5. Stir in the lime rind, herbs into the lime juice in the bowl, and spoon over the fish
  6. Cover with foil and place in the oven for 20 minutes or until the fish is tender.
  7. Garnish with lime wedges and fresh herbs to serve.
