  • Cut the chicken pieces into chunks. Cut red, green, & yellow peppers into equal sizes. Chop red onion. A cherry tomato for each skewer. Mix all the ingredients for the marinade in a bowl. Pour into a ziplock bag and add the chicken pieces. Leave for at least an hour, but preferably overnight, to allow the flavours to infuse. Use the marinade to baste, while grilling on the BBQ. Skewer the chicken, peppers and onion with a cherry tomato to top. Place on a heated BBQ and turn frequently to avoid burning. Baste continuously to avoid drying out.
